Bagels

Today’s recipe is one of my favorite bread, bagels! These bagels are very delicious with chewy interior and crispy crust. The ingredients are very simple so using good quality bread flour is the key.

Yield : 6 bagels   Cooking time : About 2-3 hours depending on the temperature


Ingredients

2 cups (250 g) unbleached bread flour

1 tbsp (10 g)  sugar

1 tsp (4 g) salt

3/4  tsp (2 g) instant yeast

2/3 cups (160 g) lukewarm water


Directions

  1. Mix all the ingredients in a bowl. If using a mixer, use the dough hook and mix on the lowest speed for about 10 minutes (about 20 minutes by hand) until the dough becomes stiff yet supple with a smooth surface.
  2. Divide the dough into 6 pieces and roll it into a smooth round ball. Cover the balls with plastic wrap so that they don’t get dry and let them rest for 15 minutes.

3.Flatten the dough using hands or a rolling pin and fold the upper and lower sides. Roll it into a rope, flatten one side and wrap the other side to make into a circle.

4. Place each shaped dough on the prepared sheet pan and cover it with plastic wrap. Proof the dough at the room temperature (77~86 °F or 25~30 °C) for about 45 minutes until they become slightly bigger.

5. While proofing, prepare the poaching liquid. Fill a large pot with about 8 cups (2 liters) of water and add 2 tbsp of sugar or honey.  Preheat the oven to 400 °F (200°C)

6. Bring to a boil and gently lower each bagel into the simmering poaching liquid. Poach them for 30 seconds to 1 minute and turn them over, and poach another 30 seconds. You can sprinkle your favorite toppings like sesame as soon as they come out of the water or use egg wash to stick the toppings.

7. Transfer each dough into the prepared sheet pan, and bake for 15~20 minutes until they become golden brown.

This bagel is so good that you can enjoy it as it is but my favorite is spreading a little bit of unsalted butter with a sprinkle of good quality sea salt.  Enjoy!
