Sometimes I have a craving for sandwiches and this huge sandwich is the only thing I need!
Yield : One giant sandwich approx. 12 inches (30 cm) ×8inches (20cm)
Cooking time : About 30 minutes (without resting time in the fridge)
Ingredients
A big loaf of bread of your choice (I used Italian focaccia)
1 green pepper
1 small eggplant
10 mini tomatoes or 1 medium tomato
1 cup (about 200g) of arugula
1/2 cup (about 50g) of shredded cheese of your choice (I used cheddar)
4 mushrooms
meat of your choice (I used a beef patty)
*Oriental yogurt sauce
3 tbsp (about 45g) mayonnaise
3 tbsp (about 45g) greek yogurt
2 tbsp (about 30g) mustard
1 spring onion
6 cilantro
salt and pepper
Directions
- Make Oriental yogurt sauce. Chop the spring onion and cilantro and mix with the rest of the sauce ingredients together. Season with salt and pepper if needed.
2. Stir-fry the green pepper, eggplant, mushrooms, and meat separately with some olive oil and salt. Set them aside.
3. Slice the bread into half and spread the sauce.
4. Place the green pepper, eggplant, mushroom, sliced tomatoes, meat, and cheese.
I made half vegetarian and half beef sandwich. You can put anything you want in this sandwich like tuna, boiled eggs, etc…
5. Cover it with the other half of the bread.
6. Wrap it tightly with cling film and put something heavy on top like a heavy pan lid or bean cans.
7. Rest it for about 3 hours ~ overnight in the fridge.
8. Slice it and enjoy!
