Star scones

Today I baked some star shaped scones. This recipe is very easy to make and the scones are crisp on the outside and soft and flakey on the inside.

Yield : About 40 mini scones     Cooking time : About 45 minutes (including baking time)


Ingredients

1 3/5 cups (200g) unbleached all-purpose flour

2 tsp aluminum-free baking powder

1 1/2 tbsp (20g) sugar

A pinch of salt

7 tbsp (70g) unsalted butter

1 egg yolk

1/3 cup (70~80g) milk


Directions

  1. Preheat the oven to 350 °F (180 °C).
  2. Cut the butter into small cubes and place the flour, baking powder, sugar, salt and the butter into the food processor bowl.
  3. Mix until the mixture resembles fine breadcrumbs.

4. Add the egg yolk and the milk and mix until they form a dough. Do not over mix.

5. Place the dough onto a plastic wrap, cover it and roll it out to shape a rectangle.

6. Fold top third into the middle third and the bottom third into the middle third.

7. Turn the dough 90 degrees and repeat the folding process.

8. Roll out the dough to 0.8 inches (2 cm) thickness and cut into shapes with any cookie cutter (I used a small star cutter).

9.  Place each scone on a baking sheet.

10. Brush milk on top of each scone (optional).

11. Bake scones in the preheated oven until risen and golden brown about 20 minutes.

They are delicious by themselves but even better with clotted cream and jam. You can also make this delicious strawberry sauce to go with it. Enjoy!
