Strawberry sauce

If you have strawberries left in the fridge, here is a great recipe to make strawberry sauce. It’s super easy and super delicious! I sometimes go buy strawberries just to make this sauce.

Yield : About 30 servings     Cooking time : About 1 hour


Ingredients

1 pound (450 g)strawberries

1/2 pound (225 g) sugar

1 1/2 (22 g) table spoons fresh lemon juice

(I recommend organic strawberries, sugar, and lemon as the result becomes tastier and you don’t want to take unnecessary chemicals.)


Directions

  1. Hull and cut the strawberries in halves.
  2. In a saucepan, mix together the strawberries, sugar and lemon juice. Stir and cook over very low heat for about 20 minutes until the strawberries release some of their juices and the mixture boils slowly.
  3. Increase heat to medium and bring the mixture to a full boil. Boil, stirring often until the liquid thickens slightly for about 5 minutes.
  4. Pour carefully into sterilized jars. It can be used immediately (topping on vanilla ice cream is heavenly) or kept in a fridge for up to about 1 month, or follow proper canning directions for longer shelf life.

If you cook a little longer and thicken the juice more, it becomes strawberry jam. I personally prefer thinner result but it’s your choice! The shelf life of jam is longer than thinner sauce.

Strawberry yogurt

Adding this strawberry sauce to your favorite yogurt with a bit of condensed milk makes a beautiful and delicious dessert! I recommend organic greek yogurt for a rich taste. It almost tastes like creamy cheese mousse…. Enjoy!
